Apple Crumble Pie Cookies
The cinnamon sugar cookie crumble topping should be made first.
Make sure the chopped apples are thoroughly blended into the dough.
Pair these perfect apple spice cookies with the pumpkin cookies.
Ingredients
Crumble
• Cookie Chips® Cinnamon Sugar - 1 bag.
• Neutral oil (eg. canola, refined olive, sunflower) - ½ cup + 1-2 tsp.
Apple Pie Cookies
• Cookie Chips® Cinnamon Sugar - 1 bag.
• All purpose flour - ⅓ cup.
• Brown sugar - 1 tbsp.
• Granulated sugar- 1 ½ tsp.
• Baking powder - 1 tsp.
• Apple pie spice (see recipe below or purchase pre-made) - 2 tsp.
• Cardamom- ¼ tsp.
• Butter, melted- 5 oz.
• Large egg - 1 egg.
• Large apple, peeled cored and chopped (use a firm apple like Granny Smith)- 1 apple.
All the ingredients you'll need for this apple spice recipe.
To Make
Cinnamon Crumble
1. Blend Cinnamon Sugar Cookie Chips Baking Mix with oil. You want to make a crumble mixture with large and small crumble pieces.
2. Spread the crumble evenly on a parchment lined baking sheet.
3. Bake at 350 F for approx. 14-15 minutes or until golden brown. Cool to set up.
Apple Pie Cookies
1. Preheat the oven to 350 F or 325 F for convection.
2. Blend Cinnamon Sugar Cookie Chips Baking Mix with flour, sugars, baking powder, apple pie spice, & cardamom.
3. Add melted butter, and egg. Blend together until dough forms.
4. Add chopped apple & 1 cup of crumble. Blend into dough until evenly dispersed.
5. Scoop cookies spacing 2” apart on cookie sheet & top with more crumble. Bake for 13-14 minutes or until the edges are golden brown. Turn the sheet pan halfway during baking.
Apple Pie Spice
• Ground cinnamon - 2 tbsp.
• Ground nutmeg - 1 tbsp.
• Ground allspice - 1 ½ tsp.
• Ground cardamom - 1 ½ tsp.
Blend together and store in an airtight container.
Crunchy Pumpkin Spice Cookies

Our spicy pumpkin cookies get a healthy inclusion of sparkling white sugar crystals.
Crispy crunchy pumpkin cookies ready to be served.
Ingredients
• Cookie Chips® Cinnamon Sugar - 1 bag.
• Pumpkin spice (see recipe below) - 3 tsp.
• Butter, room temperature - 1 stick or 4 oz.
• Large egg - 1 egg.
• Sanding sugar
To Make
1. Preheat the oven to 325 F or 300 F for convection.
2. In a mixer bowl, blend the cookie chips® baking mix with the pumpkin pie spice.
The sugar adds a next level crunch to these sweet and crispy pumpkin spice cookies.
3. Add butter and with paddle attachment, blend mix with butter until well combined. The mix will be dry and crumbly.
4. Add egg and blend on medium speed until dough forms and sticks to the sides of the bowl.
5. Pipe or pinch dough onto a baking sheet lined with parchment spacing 2” apart. Press each cookie lightly to make a flat top for the sanding sugar.
6. Sprinkle the top of each cookie with sanding sugar. Alternatively, you can pinch or pipe balls of dough into a bowl of the sanding sugar and roll around until completely coated. Then place these on a sheet pan.
7. Bake according to bag instructions. If your cookies are large, add 2-4 minutes turning the sheet pan ½ way during baking. You want the cookies to be a dark golden brown.
8. Cool and enjoy.
Use my recipe below for your own homemade pumpkin spice. You can buy pre-made pumpkin spice in the spice section of the grocery store. Sanding sugar can also be purchased in the baking section of the grocery store or online at Amazon.
Homemade Pumpkin Pie Spice
Ingredients
• Ground cinnamon - 3 tbsp.
• Ground ginger - 2 tsp.
• Ground nutmeg - 2 tsp.
• Allspice - 1 ½ tsp.
• Cloves - 1 ½ tsp.
To Make
Blend together and store in an airtight container.
Store your pumpkin spice in an airtight container and add it to your spice cabinet.
