Are you addicted to pumpkin spice?

It’s that time of year again when everything pumpkin spice hits the store shelves. Starbucks has been offering their Pumpkin Spice Latte for weeks now and if you have ventured into your local Trader Joe’s you are hit with the aroma from the moment you walk through the door.
What is it about this smell that makes us want to buy, eat, & drink the pumpkin spice experience?

I don’t know about you, but I get that warm fuzzy feeling this time of year. I love the idea of cool fall nights, sweater weather, Ugg boots, the changing of the leaves and if you are a kid at heart or just a kid, you love warm hot cocoa possibly with a bit of pumpkin spice whipped cream to top it off. What could be better?

It’s a national nostalgia. We are reminded of holiday get-togethers, happy family times, Thanksgiving, Christmas, Hanukkah. Cozy nights by the fire.

Here at Cookie Chips® we have been hard at work creating all kinds of pumpkin pie spice recipes. The test kitchen is brimming with the aroma of the holidays for weeks. We’ve been baking Pumpkin Chocolate Chip Cookies, Crunchy Pumpkin Spice Cinnamon Sugar Cookie Chips, Apple Crumble Pie Cookies accented with the flavors of holiday apple pie spice & cardamom. Topped with a traditional crumble topping for apple pie.

What is in pumpkin pie spice?

The ingredients to a pumpkin pie spice can vary by recipe. For the traditional pumpkin pie spice flavor, we blend in cinnamon, ginger, nutmeg, allspice, and cloves. Check out the fan favorite recipe below.

We’ve whipped up our own homemade Pumpkin Pie Spice and we are sharing this with you here on our blog. Easy to make and you will have it all season long for all your holiday baking.

In this blog post we're highlighting two of our pumpkin spice cookie recipes. Our crunchy pumpkin cookies and our Apple Crumble Pie Cookies. Find the full gamut of our holiday baking on Instagram, Facebook, & Tiktok  (Scroll to the footer to see our social media buttons).

The sugar adds a next level crunch to these sweet and crispy pumpkin spice cookies.

3.  Add butter and with paddle attachment, blend mix with butter until well combined. The mix will be dry and crumbly.

4.  Add egg and blend on medium speed until dough forms and sticks to the sides of the bowl.

5.  Pipe or pinch dough onto a baking sheet lined with parchment spacing 2” apart. Press each cookie lightly to make a flat top for the sanding sugar.

6.  Sprinkle the top of each cookie with sanding sugar. Alternatively, you can pinch or pipe balls of dough into a bowl of the sanding sugar and roll around until completely coated. Then place these on a sheet pan.

7.  Bake according to bag instructions. If your cookies are large, add 2-4 minutes turning the sheet pan ½ way during baking. You want the cookies to be a dark golden brown.

8. Cool and enjoy.
