Make sure you use the whole bag with 1 large egg & 1 stick of butter. (Or your favorite vegan butter).

Always preheat your oven. At least 15 minutes. You can make the cookie dough while your oven is preheating. 

Our Instructions call for 325 F°. If your oven has a convection feature, use it. Drop temperature to 300 F°. Adjust bake time if needed.

For each bag of mix, use one large egg. No small or medium eggs. It's important that your egg be at room temperature. To do this, fill a bowl with warm water, place the egg, still in its shell, in the bowl, and let it sit for 5-10 minutes.

 If using an electric mixer, use the paddle attachment to mix the dough. Do not whip the cookie dough with the whip attachment. This puts too much air in the dough.

Follow the bag instructions closely. The mixing time is very short. Do not overmix the dough by mixing for an extended time. That means don’t walk away from your mixer to snap selfies. 🤳 Bakers always scrape down the bottom and sides of their bowl between ingredients. This will ensure everything is evenly incorporated. Always start your mixer on low speed if you are using an electric mixer. Your dry mix will fly out of your mixer if you start on high. Seriously. Try it and see what happens.

Test bake! Place 2-4 Cookie Chips® on a sheet pan and bake them according to the instructions. This way, you can adjust your oven temperature and bake time if needed before baking the whole mix. As bake times and temperatures always vary by oven, rotate your sheet pan halfway during the bake cycle to ensure an even bake.

It's possible you didn't bake them long enough. When ready, the cookies should be a nice dark golden brown color. Then let them cool at least 5 minutes out of the oven to firm up. They need to cool to be crunchy. For sure, you can eat them hot out of the oven, but if you don’t let them set up, your cookies will be soft and not crunchy.

Baked cookies can be stored in an airtight container or a zip lock bag to keep crisp at room temperature. They can also be frozen and are actually delicious frozen. Unused dough can be refrigerated for up to 3 days or frozen for 3 months in an airtight container or a zip lock bag.
