Just in time for St Patty's day. I wanted to make something really fun, really colorful, that would add to your table and dazzle your friends and family. I created delicious Cookie Chips® sandwich cookies filled with vanilla buttercream frosting. Because Cookie Chips® are so crunchy, I wanted to make sure they stayed that way. Lining each cookie with white chocolate before piping on the vanilla buttercream frosting creates a moisture barrier to keep your cookies crunchy.

The Sandwich Cookie Recipe

Ingredients

Cookie Chips® - made from the Cookie Chips® Baking Mix


White Chocolate - melted


Vanilla Buttercream Frosting - see recipe below


Green food coloring


Decorations - assorted sprinkles & marshmallows from Lucky Charms cereal

Assembly

1. Bake Cookie Chips® according to bag instructions.


2. Melt white chocolate. You can do this at 50% powder in the microwave. 30-60 seconds at a time until almost melted. When mostly melted with some whole pieces, remove and stir until completely melted.


3. Dip the bottom of each cookie into the melted chocolate. Place chocolate side up on a sheet pan or plate and refrigerate to set up.


4. While the chocolate is setting up, make the vanilla buttercream frosting. (Instructions below.)


5. Pipe vanilla buttercream frosting on one cookie and sandwich the cookie together with a second cookie.


6. Decorate by drizzling white chocolate over the top of the cookie. Decorate with sprinkles and Lucky Charms marshmallows.


7. Keep refrigerated until ready to eat.


Pro tip: You can freeze cookies and thaw in the refrigerator as needed.

Vanilla Buttercream Frosting Recipe

Ingredients

Cream Cheese, room temperature - 8 oz


Butter, unsalted, room temperature - 4 oz


Vanilla - 2 tsp


Powdered sugar, sifted - 4 cups


Salt - ½ tsp


Green food coloring (optional)

Assembly

1. Place cream cheese and butter in a mixer with paddle attachment.


2. Beat together until light and fluffy. Scrape down the sides of the bowl.


3. Add in vanilla, salt and powdered sugar.


4. Beat until fluffy and all sugar is dissolved.


5. Add food coloring if using. Use as much or as little as you want until the green color you desire is achieved.


Pro tip: Buttercream can be stored in the refrigerator for up to a week and up to 3 months in the freezer. Defrost frozen buttercream in the refrigerator and re-whip until light and fluffy.
