Our take on the classic chocolate truffle. Make these bad boys dairy or dairy free.

This is an ultra creamy, dark chocolate truffle with crushed crunchy Cookie Chips® on the outside. Yum.

So what are dark chocolate truffles? The basic definition says that truffles are a type of chocolate confectionary traditionally made with chocolate ganache, coated with cocoa powder, dipped in dark chocolate, or even coated with nuts.  


Only use the best of the best chocolate for this. We used Valrhona Equatoriale 55%, but there are lots of amazing choices out there. On the professional scene there are key brands like Valrhona, Callebaut, Barry Callebaut, and Guittard. You can find these chocolates and more at worldwidechocolate.com.


If you don’t want to bother with this, head over to Whole Foods or any store that has good quality chocolate. Look for quality dark chocolate bars that you can chop. It’s a good sign when the chocolate package says 70% - 72%, or anything in that range, a little higher or even a little lower. 

The best thing to do is to buy a bar of chocolate that appeals to you. Taste it and see if it melts smoothly in your mouth and on your tongue. If you like the flavor and the texture is smooth, its a good signs that you will like the truffles you make.

The ganache comes together with a combination of chocolate and heated heavy cream. Vegans and dairy free people can easily substitute whole coconut cream for the dairy cream.

These truffles are super delicious and the perfect after-dinner delight to serve to friends and family.

Enough of that, let's get baking!

Ingredients

Cookie Chips® Baking Mix | Chocolate Chip - 1 bag - Baked & crushed.

• Heavy Whipping Cream or Coconut Cream - ½ cup or 4 fl oz.

• Dark Chocolate - 8 oz.

• Kosher salt (not coarse) - a pinch.

Assembly

1.  Chop chocolate and place in a heat resistant bowl. Set aside.


2.  In a small saucepan, heat cream with a pinch of salt just until it comes to a simmer. Remove from heat.


3.  Pour hot cream over chocolate and let it sit for several minutes to melt the chocolate.


4.  Whisk the chocolate or stir it gently with a spatula until it completely emulsifies and no cream is remaining.


5.  Allow it to cool completely at room temperature or you can refrigerate it to firm up.


6.  When the ganache is firm, with a small spoon or melon baller, scoop small balls of the chocolate ganache.


7.  Roll each portion into a round ball.


8.  Placed the crushed cookie chips in a bowl or on a plate. Roll the ganache in the Cookie Chips® crumbs until fully coated.


9.  Keep truffles in the refrigerator in an airtight container. You can serve the truffles from the refrigerator.


10.  Keeps in the refrigerator for up to 5 days.

Pro tip: Crush the Cookie Chips® by placing them in a resealable Ziploc bag and pounding it with a rolling pin or the palm of your hand.
